Each 10-oz jar of Meyer Lemon Rosemary Cure is good for curing 1 whole salmon fillet (2-3 lbs) into Lemon Rosemary Gravlax, or is enough to cure up to 2 whole chickens for Roasted Lemon Rosemary Chicken (or 6 lbs of pork or lamb chops).
This curing kit is vegan and gluten-free.

Mill Valley Pasta Co. was born out of dire circumstances. In the summer of 2020, out of work due to Covid-19 while restaurants and the food industry were shuttered and decimated by quarantine and shelter-in-place, Tony Adams fired up my small vintage pasta extruder and, in the toughest times anyone could remember, made pasta for friends and neighbors. There were smiles and many thanks given, and an idea was born. What if he could share this pasta with everyone? What if he could shift gears and pivot, both out of necessity for survival and out of deep desire to continue to share great food with great people?
From there, the company snowballed into something, little by little, until what it has become today. Now capable of producing hundreds of pounds of pasta in a single day, they have three pasta machines, and have learned a lot, cursed a lot, cried a lot, and felt the joys of victories on the days they needed them the most.
