Bucatini is having a moment, and we’re couldn’t be more happy about it. The classic dish from Amatrice (just a few hours outside Rome in the middle of the boot), Bucatani all’Amatriciana is delicious and simple to prepare, and now even more so with this dinner kit featuring the hottest pasta around, Mill Valley Pasta Bucatini.

This dinner kit will come with one box of bucatini (about 12 oz/4 nests), 1 pint of our Spicy Sciue-Sciue sauce, and a 4-oz hunk of Canteen Meats Guanciale (think pancetta  -unsmoked bacon- but from the cheek), and of course, our recipe for this classic. Feeds 2-3 people.

Canteen Meats hand make all of their charcuterie and salami in San Rafael, CA after sourcing only the finest meats from the best local farms.

Mill Valley Pasta Co. was born out of dire circumstances. In the summer of 2020, out of work due to Covid-19 while restaurants and the food industry were shuttered and decimated by quarantine and shelter-in-place, Tony Adams fired up my small vintage pasta extruder and, in the toughest times anyone could remember, made pasta for friends and neighbors. There were smiles and many thanks given, and an idea was born. What if he could share this pasta with everyone? What if he could shift gears and pivot, both out of necessity for survival and out of deep desire to continue to share great food with great people?

From there, the company snowballed into something, little by little, until what it has become today. Now capable of producing hundreds of pounds of pasta in a single day, they have three pasta machines, and have learned a lot, cursed a lot, cried a lot, and felt the joys of victories on the days they needed them the most.
